Serves: 4 Cooking time (approx.): minutes Style: Italian Vegetarian ½ recipe pizza dough divided into <<4>> pieces 2 tablespoon(s) olive oil 1 onion(s) finely chopped 2 cup(s) mushrooms chopped 1 green bell pepper(s) finely chopped 1 teaspoon(s) chopped fresh parsley 1 tablespoon(s) fresh oregano leaves choppe ½ teaspoon(s) red chilli flakes sugar, salt and pepper to taste ½ cup(s) parmesan cheese slices 4 cup(s) mozzarella cheese chunks grated romano cheese for garnishing
To prepare the filling, heat the olive oil in a pan. Saute the onions for about 4 minutes or till the onions are transparent. Add the mushrooms, green bell peppers and saute for about 2 minute(s). Stir in the fresh parsley, oregano and red chilli flakes. Season with salt and pepper. Let cool for a while. On a floured surface, roll out each portion of the pizza dough into thin circles not more than 1/4" thick. Place them on a greased baking tray. Spoon some filling on one side of each circle. Top with mozzarella chunks and parmesan slices. Brush the edges with a little water and fold over each circle so as to form a semi-circle. Squeeze the edges or press well with a fork to seal. Bake in a preheated oven at 200o C / 400o F for about 15 minutes or till crisp golden brown. TIPS:
To make smaller calzones, divide the dough into smaller portions and proceed as above. The calzone can be filled with just about any filling of your choice. Fresh herbs can be substituted with comparitively lesser amounts of dry ones. Romano cheese can be replaced by any other cheese of your choice for garnishing the calzone.
